Ingredients
- 1 bunch kale (about 6-8 cups, chopped) [O.K. Produce or Iovine Brothers Produce]
- 2 medium oranges [O.K. Produce or Iovine Brothers Produce]
- 1/2 cup unsalted pumpkin seeds [Iovine Brothers Produce]
- 1/2 cup crumbled goat cheese (or feta) [Downtown Cheese]
- 2-3 tablespoons olive oil (for dressing) [Kensington Food Company]
Instructions
Prepare the kale: Wash and remove the stems from the kale. Chop the leaves into bite-sized pieces and place them in a large bowl. Massage the kale with about 1 tablespoon of olive oil for a minute to soften it.
Slice the oranges: Peel the oranges and slice them into segments or thin rounds, removing any seeds.
Add toppings: Sprinkle the pumpkin seeds over the kale and arrange the orange slices.
Add cheese: Crumble the goat cheese on top of the salad.
Dress the salad: Drizzle the remaining olive oil, and add salt to taste if desired.
