Risotto with Mushrooms
(Recipe provided by The Cookbook Stall)

Cooking Instructions:
  1. Sauté mushrooms in a pan- about 5 to 10 minutes until tender and golden.
  2. In a large skillet combine oil, garlic, & onion and cook on medium heat for 4 minutes.
  3. Add rice and cook 3 minutes, stirring to coat.
  4. Add broth 1 cup at a time, stirring frequently until liquid evaporates. When you add the last cup of broth add the mushrooms and parsley. Cook until the rice is al dente and creamy.
  5. Stir in butter and half of the cheese. Add salt & pepper. Sprinkle remaining cheese.
