Gluten Free Blondies
Preheat oven to 350 degrees. Prepare an 8×8 inch cake pan with butter, oil, or baking spray. In a food processor, combine all ingredients except walnuts and chocolate. Pulse a few times to incorporate, then blend on medium speed for about 3-5 minutes. If adding nuts and chocolate, transfer to a mixing bowl, and stir to combine. Transfer mixture to prepared pan, and smooth into an even layer. Bake for 30 minutes, until sides pull away from edge of pan and top has a dry finish. Allow to cool before cutting. Store in an airtight container for up to 5 days.
