Braised Short Ribs
Pre-heat oven to 300 degrees. Rub short ribs generously with salt & pepper. In a large skillet, heat 2 tbsp oil over medium high heat. Sear ribs on all sides and transfer to a large baking dish. Add onion, celery & carrot to skillet. Brown thoroughly, about 10 minutes. Add tomatoes to pan, and continue to cook for 10 minutes, allowing liquid to reduce. Add wine and herbs. Bring to a boil then pour over ribs in baking dish. Cover with foil and transfer to oven to bake for 90-120 minutes, until very tender.
