Elizabeth Halen and Jason Wagner opened Condiment in 2016 and have brought the concept of fresh and easy back to the Market in the form of freshly churned butter, whipped-to-order mayonnaise, and a variety of salad dressings and sauces prepared daily in small batches. Halen and Wagner have also incorporated sustainability into their business model, recycling waste from other merchants to make some of their products, for example, collecting bones from the Market’s meat & poultry purveyors to fortify stock before becoming waste product.
Condiment also ties together the shopping experience by encouraging Reading Terminal Market shoppers to visit a butcher or fishmonger to purchase their protein and bring it to the store in Center Court to be paired with one of their house-made marinades or sauces and sealed in a bag as they continue to shop; by the time the shopper gets home to cook, a nice portion of the work in prepping their meal is already done. Condiment has reinforced the important role of the Reading Terminal Market in Philadelphians’ approach to eating, cooking and grocery shopping.
